I love weekend breakfasts, but I hate cooking on an empty stomach. I like brunches, but I detest getting ready early to meet my friends – you see, my friends very well know that if they want my presence early in the morning I. MUST. BE. BRIBED. WITH. FOOD.
A traditional Filipino breakfast is a “meat-si-log”, meaning choice of protein+garlic fried rice (sinangag) and fried egg. Meat is whatever your heart desires – marinated beef (tapa), Spam (yes, we love spam!), bacon, dried fish (daing), sausage (longganisa).
If I could have my way, I would eat breakfast this way every single day.
Luckily, my dear husband Dave made pork loin a couple of days ago and it’s been sitting in the fridge, and truth be told – when he woke up, I proclaimed that I wanted pork loin, eggs and rice for breakfast! And he microwaved the leftover pork loin and leftover white rice. He then proceeded to fry a runny sunny side up egg for me. He even made the coffee.
Aaaaw. The only thing I did here was sprinkle fried garlic on my rice.
I’d say, if you intend to sleep in and stay home in your pajamas all day – keep this idea in mind. Waking up to an awesome breakfast with minimal effort is the key to lazy weekend happiness. Unlimited mimosas, yes?
Fried garlic can be found in Asian supermarkets – sometimes they are in bottles and sometimes they are in packs like these. You can make some for yourself – you will find the process in my Arroz Caldo post.
